What makes this experience unique?
In this mountain region, tofu is often made from local soybeans grown on upland fields. The beans are smaller but known for their strong aroma. Instead of large-scale production, families usually make tofu in small batches in their home kitchens, often early in the morning so it can be sold at the local market or served the same day. Many Giay and Dao households have kept this method for generations: grinding soybeans, boiling soy milk over a wood fire, and pressing it with simple wooden molds. By joining the process, you see how a common food takes on a different meaning here—shaped by local crops, traditional kitchens, and the routine of village markets in the mountains.
