What makes this experience unique?
Long is dedicated to handcrafted vegetarian cuisine using green soybeans grown in Cam Thanh. According to him, this type of bean is rich in nutrients, has a delicate flavor, and is suitable for making tofu, soy pudding, and other naturally fermented vegetarian products. The processing focuses on preserving the natural flavor and nutritional value of the ingredients rather than mass production. At Long Gia Kitchen, processes such as soaking, grinding, cooking, molding, and making vegetarian cheese are all done manually. Each step requires precision and patience, from the cooking temperature to the molding time. As a result, the finished product has a soft texture, a light flavor, and is free from additives.
What you'll get to experience with us
You're greeted with a welcome drink in the warm atmosphere of Long Gia Kitchen, where the aroma of wood smoke, soybeans, and firewood gently permeates the air. The host slowly tells the story of vegan cheese – a fusion of cuisine, green living, and Buddhist spirit. You grind soybeans yourself using a stone mortar, filter the milk, and cook it over a wood fire, feeling the heat and the fragrant aroma of the soy milk spreading. While waiting for the milk to boil, you visit the nearby village temple, listening to simple stories about their beliefs. Back in the kitchen, you enjoy a hot cup of soy milk you made yourself, then continue to prepare the sourdough starter, learning about the fermentation and smoking process to create tofu cheese. The experience concludes with a simple vegan meal, where you savor the rustic flavors and truly feel a connection to a slow, peaceful pace of life.
